Day 58 of 365

Housework day so not much done outdoors. :( I did try some of my dried figs in a homemade fig newton type recipe, which I found here.

Strained my water kefir grans and started a new batch. I'm making a kefir "soda" out of the first batch with apple juice.

Made butter and buttermilk, also started another batch of milk kefir.

  2. I made apple juice 'soda' too with my last batch of kefir water. The other juices (mango, peach) had way too much sugar (natural), so I switched to apple juice. It didn't fizz as much, (50/50 blend), but tasty nonethe less. Hope yours is too. :-D

    Kris, I reckon this is where experimentation comes in. I noticed on the instructions you sent she recommended grape juice. My kitchen has been particularly chilly (around 60) so I've been concerned it's too chilly for the kefir grains. From what I read though, this simply slows the process down. I didn't want to leave them longer than 48 hours though. I'm very curious of how it will taste!

    1. Yep, no longer than 48 hours - and my chilly kitchen sure doesn't seem to slow mine down a bit. The more sugar in the fruit/juice, the more fizz. Mighty Mango (per 8 oz/32g = almost 8t!!) & peach (38g) per C was outta site. Apple juice only 22. I'll give up fizz for less sugary drinks. And yep - now I'm experimenting with tea.

    2. Well, tomorrow will be my 2nd 48 hours for the apple juice. I read in the instructions you sent that grape works good. Love that you're experimenting with tea. There are some tasty teas that could benefit from some fizz@

  4. Once I add juice to the kefir water, I only leave it out for 24 hours, then put it into the fridge. As I drink the juice over the next few days, it gets fizzier. I don't think I'll 'fizz' the tea as I don't want to have to drink so much sugar....
