Day 22 of 365

Freezing rain most of the day.

Because it was a good day to spend by the wood cookstove keeping warm, I took my first stab at rendering goat fat. I got a 10.66 pound bag of it from the butchers last year and it's been in the freezer until I had a chunk of time to give this a try. My problem is that my biggest cast iron dutch oven is for campfire use, i.e. with legs. It took me all day to melt it down, but I ended up with two quarts of rendered fat. It technically isn't lard or tallow, but I'll use it!

Using the food:

Scrambled eggs for breakfast and biscuits, which used homestead eggs and kefir, accompanied by my strawberry jam and mixed fruit jelly.

Health drink instead of lunch of home canned tomato / veggie juice and fresh garlic

Pizza for dinner with homegrown tomato pizza sauce and mozzarella cheese. Dessert was blueberry pie made from my home canned blueberry pie filling. Not as good as fresh, but I had so many blueberries I'm glad I canned some as pie filling. Very convenient.
